Analysis of the L-ascorbic acid/water interaction by neutron scattering
Source abstract
Abstract
Abstract Neutron scattering results on aqueous solutions of L -ascorbic acid (Vitamin C) are reported. By means of neutron scattering measurements the diffusive properties of Vitamin C in water have been investigated. A strong slowing down of the water dynamics induced by the presence of Vitamin C has been revealed. Furthermore, following a procedure first proposed by Sokolov, the relative weight of the relaxational versus low-energy vibrational contribution at the glass transition temperature of Vitamin C/H2O mixture has been evaluated and the `fragility' parameter estimated.
